To Die For Pot Roast

1 beef roast (any kind)
1 pkg. ranch dressing mix (dry)
1 pkg. brown gravy mix (dry)
1 pkg Italian dressing mix ( dry)
1 1/2 cup warm water

Place roast in crock-pot.  Sprinkle contents of all 3 envelopes over roast.  Pour water in bottom of crock-pot.  Cook on low for 6-7 hours.

Enchilada Pie

One of our birthday traditions is that the birthday person can choose what we are having for dinner.  Alyssa who just had a birthday chose Enchilada Pie...and she is my one that won't eat tacos because they are too spicy...but she loves  this.

This is a super easy to put together meal with only 5 main ingredients

* 2 cans of Enchilada Sauce
* 1 can tomato soup
* cheese
* flour tortillas

* black olives, green onions, etc..are optionals

This recipe is a layering recipe much like lasagna.  In fact, my younger girls always mix up the names enchilada and lasagna..even tho one is Mexican food and the other is Italian food.

First spoon a little bit of enchilada sauce into the bottom of your casserole dish.  This will keep the flour tortillas from sticking to the bottom and help the sauce to be distributed through out the dish.

Fry up about 1 lb. of hamburger.  This amount is very "suit to your needs" amount.  A little bit goes a long way, or if you want it more "meaty" fry up 2 lbs. Drain the grease.

Add the remaining enchilada sauce (2 cans) to the cooked hamburger and mix well.

Next you will begin layering your tortillas/enchilada sauce/ cheese...

Tear up your tortillas like this and layer them a little, then add your sauce...

and then the cheese & repeat those layers

Bake at 350 degrees for 30 minutes covered with tinfoil.
