Vegetable Dip

You are having lots of friends over and you want to some dip to go with the veggies you have in the fridge. This is the perfect dip for veggies or even chips.  This is so good, my husband loves me to make this for all of our traditional holiday spreads.

Vegetable Dip
1 cup mayonnaise
1 cup sour cream
1 tsp. Bon Appetite
2 tsp. dill weed
2 tsp. onion salt

Apple Streusel Muffins

I have a love for apple muffins! I usually make them when I have apples where the skin is starting to get a little shriveled, but the inside is still very good.  I don't want to waste them, so I turn them into Apple Muffins.  I also make these when I have perfectly good apples, because these are so tastey!
This is a recipe I have played around with a little and I absolutely loved the way these turned out.  I made them last night to go with dinner, and they became the favorite part of the meal.  My girls had the left-over muffins for breakfast this morning as they headed out the door.

Apple Streusel Muffins
350° for 15 minutes, makes 12 muffins


½ cup butter
2 eggs
1 cup white sugar
1 ½ cups apples, shredded, or cubed very small
2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 tsp. vanilla
1 tsp. Cinnamon
½  tsp. nutmeg
1 tbsp. butter
1/3 cup brown sugar
1 tsp. cinnamon
1 Tbsp. flour

Directions: Peel and cut or shred 1 ½ cups apples.  Don’t worry about peeling ALL the skin off, leave some or even all of it if you like. If you cube them, cube them very small. Mix together the butter, eggs and sugar. Add the apples, and the remaining ingredients, adding Flour last. 
The mix will seem thick, but it will bake up moist and good.  The apples when baked will add a really nice moisture. And I love the taste of the butter in the recipe.
Grease  your muffin pan.  I use an ice-cream scoop for muffins. Using a regular ice-cream scoop, not the cookie-dough ones, add a small scoop to each muffin tin.  Add some of the topping to the muffin batter that you have just put in the pans.  Next add more muffin batter on top, and more streusel topping. 
Bake at 350 for 15 minutes. Baking temperature and baking time are flexible depending on your individual ovens.
I love biting into the muffins and tasting the cinnamon and brown sugar streusel. YUM!
